Tell us about how you got fond of Japanese culture?

Based on a popular belief, apparently, Ramen was introduced by a Chinese scholar in 1660. From then on, Ramen has been an important medium for the culture. I personally haven’t been to Japan, but I would love to go one day - the culture is so immense from Art to Fashion.

 What is your favourite Japanese food, and why? 

Is that even a question? It’s definitely Ramen! The slurp of a good noodle makes it my favourite. It’s a dish that you think possess a lot of simplicity but on the contrary, has a lot of complexity. I love it because it’s filling, satisfying and interesting to eat. The mouthful of a nice rich soup. 

How did you get obsessed with Ramen? 

A part of me at a very young age was ramen! I used to go to an Asian supermarket and would buy one of those noodle packet, which is an Indomie Noodle Ramen if you’d convert that today. We’ve started with innovating dishes in one of our sister brands, Bintang and have found that it wasn’t easy - so I made my own Ramen house! Bewildered by the complexity of this dish - we wanted to put a twist by adding the Filipino classic dishes in a bowl!

Halal Japanese Food in London

What is Halal and what made you go for a Halal-ramen joint? 

Halal in Arabic word means lawful or permitted. These terms are normally used in the context of food. Whenever I look for a ramen joint in London, the majority, if not all - serve just pork options. At Ramo, 100% of our dishes are Halal and have a different twist in terms of broth! There are a lot of foodies who don’t eat meat or at least certain ingredients based on religious practices. Our personal goal in Ramen is to have a representation of tradition with a twist of innovation. We’ve seen this as an opportunity to create another dimension for the Ramen scene in London, especially for foodies. 

What is your favourite element in Ramen?

As a chef, the broth is definitely my favourite - it represents a labour of love that takes over a day to make using inexpensive ingredients. It’s heaven here on earth! The Sinigang ramen at Ramo is second to none. It’s an authentic reflection of how a classic Filipino dish can be transformed and be palatable to a noodle bowl.
